Christmas Leftovers
After all the turkey, roast potatoes, Yule log and Quality Streets, it’s not unusual to have lots of your Christmas fruit cake/pud left over. Whilst fruit cake will last for a considerable length of time if wrapped properly, here are a few staff recommended recipes to upgrade your leftovers:
George’s Christmas Pud Bites
- Crumble your leftover Christmas cake/pud into a bowl.
- Melt some dark, milk or white chocolate/leftover Christmas chocolates over a bain marie.
- To 2 parts of chocolate, add 1 part of double cream to the bowl and remove from the heat.
- Mix with the Christmas pud. Add a splash of brandy or whisky, for adult-only versions!
- Stir thoroughly and then leave to set in the fridge for a few hours.
Roll the mixture into balls. before dusting with chopped nuts or simply icing sugar to finish.
Crumbled Christmas Cake
Nicole’s Christmas Pudding Ice Cream
- Leave a tub of vanilla ice cream out to soften slightly.
- Crumble your leftover Christmas cake/pud into the softened ice cream.
- Add a splash of leftover liquor. Think Baileys, rum, brandy or whiskey.
- Place back in the freezer for at least 2 hours before serving.
