If you use recipes from America, you may often wonder what certain ingredients are. Twins have compiled a list of US baking terms and ingredients and translated them into our own UK variations.
US -
Wax paper – Greaseproof paper
Frosting – Icing (normally buttercream)
Cornstarch – Cornflour
Self-
All-
Strong flour – Bread flour
Whole-
Almond meal/flour – Ground almonds
Powdered/Confectioner’s sugar – Icing sugar
Light brown cane sugar – Demerara sugar
Superfine sugar – Caster sugar
Non-
Reduced fat milk – Semi-
Heavy cream – Double cream
Half & half/light cream – Single cream
Corn syrup – Golden syrup
Molasses – Treacle
Jelly – Jam
Shortening – Solid white vegetable far (e.g. Trex)
Bittersweet chocolate – Dark cooking chocolate (70%)
Semisweet chocolate – Plain milk cooking chocolate (50%)
Fondant paste – Sugarpaste
Gum paste – Flower/modelling paste
Baking soda – Bicarbonate of soda
Please note, baking soda is not the same as baking powder.
Baking powder (British) is a raising agent which contains bicarbonate of soda (baking soda) and cream of tartar.
